Hope you had a Happy Independence Day!

‘Cause we sure did!

Now that the celebrating is behind us we have a few very busy weeks ahead and planning the menu is going to be simple and frugal…

We did great last week with our limited budget. We spent a total of $6.00 on vegetables $17.00 on 10lbs of blueberries to freeze. Kevin made an icecream run at the end of the week which was a bargain at $1.88! I also picked up some Eggo waffles for $ .50 a box at Target. I spent $4.00 on those!  That was it! Amazingly we spent only  $28.88 on groceries last week and most of that was food to stock up in the freezer. Not bad at all!

So we are going to try it again this week. There is still plenty in the freezer and we’ll be going away at the end of the week.

So let’s see what’s on the menu this week:

Monday: Leftover baked ziti

Tuesday: Baked Salmon with Coconut Crust (this sounds so delicious!)

Wednesday: Breakfast for dinner (Waffles, eggs and bacon)

Thursday: Chicken Pesto Parmesan (from the freezer)

Friday: Heading to CT !

Saturday: Celebrating my niece’s 1st birthday

Sunday: Whatever is in the fridge when we get home!
