This month we went WAY over budget for food because I was eating wheat-free and didn’t have a clue what I was doing! So I’m going to try to make every meal out of what we have in the freezer and pantry. I did an inventory of everything we have in our deep freezer as well as our stockpile of food in the basement. We have a lot of good stuff down there. So my goal this week is to try to not spend any money on groceries! I’ll report back at the end of the week to see if I can manage!
So here is our from the Pantry menu for this week:
Monday: Tilapia with Rice and Green beans
Tuesday: Phyllo Chicken Packets – this will be my first attempt with Phyllo dough! Wish me luck!
Wednesday: Black Bean soup and Salad
Thursday: Pasta Primavera – we tried this recipe a few weeks back and it was delicious!
Friday: Meal from the freezer (I believe this will be Chicken Enchiladas!)
Saturday: Salmon on the Grill with Salad and Green Beans
Sunday: Leftovers so mom can have a day of REST!
