Menu Plan Monday – With Wheat Free Recipes

Wheat free?? WHAT! Why wheat free??

I’ve been feeling “weird” for about 2 months now. I have a bunch of weird symptoms that don’t seem to go together. The main problem being seeing spots or “floaties”, pain in my leg (hip, knee, ankle and foot), regular headaches and some other symptoms. I put off going to the doctor for nearly 2 months and I finally went last week. They didn’t have an answer but I’ll be getting some tests done this week and hopefully I’ll have some kind of answer soon.

I did a lot of hunting around online for some direction, I wanted to find some advice. After hours of searching online and time in bookstores I decided to go Wheat Free for a month to see how that makes me feel. I’m on day 3 and it’s going well. I don’t feel too differently yet, but it’s just the beginning!

So here is my Wheat Free menu for the week:

Monday: Chicken Broccoli Cheese Casserole with Salad

Tuesday: Spaghetti and Sausage – using Brown Rice Pasta with Salad

Wednesday: Soup and Salad night! ( can you tell we’re going to be eating a lot of salad – We have tons of lettuce in the garden to eat!)

Thursday: 20 Clove Chicken in the Crockpot with Salad and Garlic Bread (I’ll bake some gluten free bread for me)

Friday: Fried Rice in the Crockpot (we’re heading out Friday night for the weekend So I’m planning on packing this up for the trip!)

Do you have any tips for eating Wheat or Gluten Free? Help a girl out!

Let me know you are serious about getting rid of your frozen dinners. It seems like you could easily keep them and save them for when your month of wheat free eating is over. They’ll last a month!!
