
This week we’re going to keep it simple because I’m so busy with the Spring Cleaning Party with the exception of our “new recipe of the week”.
So here’s the plan:
Monday: Turkey Burgers with Roasted Asparagus (I know it seems weird but we’ve got a ton of asparagus we have to eat!)
Tuesday: Cinco De Mayo!! Chicken and beef fajitas with Mexican Rice
Wednesday: Soup and Salad night (soup from a can, salad from a bag)
Thursday: Greek Pasta with Tomatoes and White beans (our new recipe for the week)
Friday: Leftovers
Saturday: Curried Honey Chicken in the Crockpot (recipe from a friend… will post later)
Sunday: Anything served to me on a tray while in bed! Happy Mothers Day!

I saw this great recipe for a crock pot chicken that I haven’t tried yet but it’s on my menu for next week.
You take a 3-4 pound roaster and clean it, stuff it with halved lemons and crushed garlic, then tie the legs together. You put it on a bed of either tin foil balls or potatoes, onions and carrots all coursely chopped. Then you add liquid. You can do chicken stock or wine and let it cook on high for about 5 hours.
It sounded simple and got great reviews plus there are plenty of ways to personalize the flavors. And the best part is that you don’t have to watch the oven! You can go about your day and in the end dinner will be ready. You can use the juices for a pan gravy too just add some corn syrup or flour.
I didn’t mean corn syrup! I meant corn starch!
