
Last weeks menu was a hit! Especially the Salmon and Sweet Potato recipe!
I think we will try a new recipe each week, since it’s been going so well.
This weeks new recipe is White Chili with Ground Turkey
I’m including breakfast and snacks on my menu this week because I’ve been finding myself hunting in the fridge when snack time comes and that never turns out good!
Breakfasts: Cereal, Fiber One Pancakes, Oatmeal with strawberries, Eggs, English muffins, Cantaloupe and coffee (oh… what’s that you say? Coffee is not a breakfast food!! I disagree.)
Snacks: For me: Cantaloupe, Crackers and cheese (laughing cow cheese), grapes, yogurt and apples.
Dinners:
Monday: Coconut Crusted Tilapia (sorry no recipe, I got these for a great price at the store this weekend) Rice and Steamed Asparagus
Tuesday: Grilled Chicken and vegetables with baked potatoes- we marinade the chicken and vegetables (separately) in lite Italian dressing then we pop them on the grill!
Wednesday: Soup and Salad night – White Chili with Ground Turkey
Thursday: Leftovers
I wanted an easy night!
Friday: Turkey Burgers with green beans and sweet potato fries
Saturday: eh! I’m not sure yet – usually Salad and something on the grill if the weather’s nice.
I need your help!
I’ve been having a hard time thinking up new snacks that include fruit. I’m kinda tired of eating apples, strawberries and grapes all the time. How can I eat more fruit but make it a bit more interesting??

We like to have smoothies every day as one of our snacks. This way you can include whatever fruit you like!
I was also going to suggest smoothies. What about dried fruit? Does that count?
I’ve been making a few smoothies, I can’t do dried fruit for some reason… I should find out why because that sounds yummy!
